First you must understand what "Grounded" mean. It is a condition that the aircraft is not airworthy.....meaning certain maintenance issues have grounded the aircraft and it has been removed from service until such time it can be safely return to service. Since Russia, like you said, does not like single engine fighters that does not mean single engine aircraft are automatically grounded. Some Russian trainers are single engine and we have a few. US top fighters are single engine like the F-16, stealth fighter F117, and the new F-35.
Now with that said, is twin engine aircraft better than single engine (one is good two is better).....not necessarily. Multi-engine aircraft require more pilot attention and an engine failure could occupy the pilot to a point of overload depending on pilot training and experience. In single engine aircraft the decision is made for you if you loose the engine, you are going down. There are many examples of pilots loosing an engine in twin aircraft and they end up crashing because of lack of proper training and complacency.
Single engine aircraft are as reliable as multi-engine aircraft. The design dictates the mission of the aircraft.
