    Hi, I travelled to Armenia about a year ago. I loved all the bbq there... it is sooooooo good. I especially liked the ground pork Khoravatz. Does anyone have a recipe that I could make these at home? I am really craving them...

    khorovats is made with slabs of unground meat. To make an authentic khorovats, you'll need a firepit and wood. I'm sure the bbq you had in Armenia used wood, rather than propane or charcoal. The cooking itself is actually not very difficult, except for knowing when to start cooking (how low the wood embers get before you put the meat on them) the meat and when it's done. The key is slow cooking, so that it's very tender but yet throughly cooked and not rare. Marinade the meat, during the previous night. There are many different types of marinades, some unique for each family, passed from generation to generation. But, again this refers to solid meat barbequeing. Ground meat is a different thing altogether, because you cook it more like a hamburger, rather than sticking on the "shampur" (the long steel rod).

          I think what you had was lule kebab. Its marinated groud meat. I cant really remember the recipe exactly but it uses beef insead of pork but i would imagine it to be similar.
